Need a breakfast dish that’s healthy, vegan, can be made in under 20 minutes, and the whole family will enjoy? These German vegan apple cinnamon pancakes tick every single one of those boxes , so much so that you might not want to even share them with your family. And you’d never know they were vegan-friendly, for the meat eaters amongst you.
Anyway, without any further delay, let’s jump right in.
How to Make Vegan German Apple Cinnamon Pancakes
These breakfast pancakes will take about ten minutes or so to prepare, and around the same amount of time to cook depending on whether you want to add the optional extra ten minutes in the oven. (That’s a crunch preference, though.)
You could also have them for dessert, for a snack, or for any reason you like, really. They’re so quick and easy to make, and they’re even pretty tasty cold, too.
Ingredients
You will need the following ingredients to make this tasty vegan breakfast treat:
- 125g plain flour
- 2 apples
- 1 tbsp plus 1 tsp corn flour
- 1 tsp baking powder
- 2 tbsp caster sugar/sweetener
- 1 tsp cinnamon
- Pinch of salt
- 2 tbsp vegetable oil
- ½ tsp vanilla extract
- 140ml plant based milk
Tools & Equipment
It’s time to get the ‘kit’ together. I recommend having everything to hand before you get started, but that’s only because I make a right mess in the kitchen and always get flour and all sorts of other stuff on the insides of my cupboards. You’ll more than likely need the following items to whip up this dish:
- Mixing bowl
- Wooden spoon/stirrer
- Chopping board + knife
- Apple corer
- Frying pan
- Stove
- Oven (optional)
Cooking Instructions
You’ll want to start these vegan German apple cinnamon pancakes by making the pancake batter. Why don’t we take things step by step?
Batter
Grab your mixing bowl and add the following ingredients: baking powder, corn flour, plain flour, sugar, cinnamon, and the pinch of salt. Give it all a good mix.
Once mixed well, add the vanilla extract, vegetable oil, and the milk substitute. This mixture needs to be stirred gently so it no longer contains any lumps, but make sure you don’t over-beat it. You’ll lose all the air bubbles otherwise.
Let the batter sit for a few minutes. While you’re doing that, it’s time to prepare the apples.
Apples
Wash the apples, then peel them. Core them, too. You will want to cut them into round rings, like pancakes. (Except they have a hole in the middle, so they’re more like donuts, really.)
Get Fry-Ready
Once the batter is ready and has been sitting for a few minutes, and the apples are prepared, it’s time to get fry ready.
You’ll want to add a small amount of oil to your frying pan, around a teaspoon. Let it heat up. (Just not too much.)
Time to Cook
You will want to get your apples next to the batter, within reach of the frying pan.
Pick up one apple ‘round’ and then dunk it into the batter. Once fully coated, pop it into the frying pan.
You will need to keep checking the apple pancakes as they fry. Once they turn golden-brown on one side, turn them over so they can do the same on the other.
You can either cook them one-by-one in the pan, or all together if the pan is big enough. I personally prefer to do them one-by-one. They don’t take long to cook, and it’s easier to keep an eye on them.
Optional Oven Extra
If you like your pancakes to be crispy on the outside and nice and juicy on the inside, with a slightly softer inner apple core, pop the cooked pancakes into the oven.
You will need to preheat the oven to 180˚C, and they’ll need roughly ten minutes or so.
