How to Make Raspberry and White Chocolate Mocha
This is not just another coffee recipe; it’s an extraordinary sensory journey that will leave you craving more with every sip. Whether you’re a coffee connoisseur or an occasional caffeine seeker, this fruity and sweet hot coffee drink will redefine your caffeine experience.
Ingredients
The following ingredients are to make one of these fruity, chocolatey coffee drinks. Remember to double for two cups or mugs (so on and so-forth).
- Espresso – 1 or 2 shots (to taste)
- Raspberries – 90g
- White chocolate – 65g
- Double cream – 60ml
- Sugar – 1 tablespoon
- Salt – 1 very small pinch
- Milk – to fill mug
- Raspberries – optional, 2 or 3 for decoration
- Squirty cream – optional, for decoration
When it comes to the raspberries, fresh is best, but frozen will work just fine. Just make sure you take them out the freezer in enough time for them to defrost. You will need to blend them, which will be difficult if they’re still rock hard.
If you don’t fancy raspberries, use strawberries instead. Coffee, chocolate, and strawberry make a great combination.
You don’t need to use cow’s milk, either; you can use whatever kind of milk or milk substitute you like. You can also substitute the double cream for a vegan variety, a mixture of milk and butter, evaporated milk, coconut cream, and more.
Finally, if you prefer milk or dark chocolate, use that instead of white.
Equipment
I like to grab everything I’ll need right at the beginning. If you’re the same when you’re whipping up something tasty, here’s the list of what you’ll probably need:

- Tablespoon
- Measuring jug
- Weighing scales
- Blender
- Espresso-making equipment
- Milk steamer or alternative
- Saucepan
- Heatproof mixing bowl
- Sieve/cloth for sieving
- Jug/bowl to collect after sieving
- Airtight container – for syrup and puree storage
Raspberry and White Chocolate Mocha Recipe: Step-by-Step
Grab your apron and get ready to embrace the magic of coffee-making, as we dive into the secrets behind crafting the perfect raspberry white chocolate mocha that will have your taste buds dancing in delight.
Step One
Start by grabbing a saucepan and pouring in the double cream, then letting it sit over a low-to-medium. It should get warm/hot, but it should not get to the point of boiling.
Step Two
Grab your blender, then pour the raspberries in. You’ll also need to add the sugar. Pulsate the blender, checking every now and then, until the entire raspberry-sugar mixture is well mixed and smooth.
Step Three
For this step, you’ll need a sieve plus a jug or bowl to collect the smooth puree. This gets rid of the raspberry seeds and any other lumps that would otherwise ruin your hot beverage.
This is your raspberry puree. You can use it for this drink and plenty of others, such as hot chocolate, or boozy cocktails. As long as you keep it stored in an airtight container, in the fridge, it should last for a week.
Always do the sniff-and-see test before consuming food you’re not sure about.
Step Four
Assuming the double cream is hot at this point, remove it from the heat.
Put the white chocolate chips into a heatproof mixing bowl. If you’re using a bar of chocolate, break it down into small, chip-sized chunks.
Pour the hot double cream over the white chocolate in your mixing bowl, and let it melt for around a minute. After that, stir gently but regularly until everything is liquid and mixed together.
No chocolate chunks should remain.
Step Five
Start brewing the espresso in whichever way works for you. If you have a Nespresso machine, Amazon is just one of the places you’ll find espresso pods. The same applies to Tassimo machines, too. (Which I personally have and love!) You can also get cafetiere or coffee pot-style machines with espresso ground coffee.
And, if those don’t satisfy you, you can also buy instant espresso coffee.
Step Six
It’s time to steam the milk, again, in whichever way works for you. There are plenty of milk frothers and steamers to choose from, from coffee shop-style machines to gadgets you can use in your own kitchen.
Step Seven
Now, grab your mug or cup, and add one or two tablespoons of both the white chocolate sauce and raspberry puree. If you’re using heat-safe glasses, drizzling the sauce and puree around the inside decoratively can help to impress.
If I’m using a non-transparent mug and I’m alone, I’ll just chuck it all in the bottom because I’ll mix it all up anyway.
Step Eight
Grab your one or two shots of espresso and pour them into your mug, on top of the white chocolate sauce and raspberry puree.
Step Nine
Pour the steamed milk over the top of the espresso-fruit mix and mix well to bring all of the delicious flavours together.
Step Ten
If you’re garnishing the top of your drink with raspberries and squirty (or whipped) cream, now’s the time to do it. The drink is finished. All that’s left is the decoration (if you’re doing it) at this point.
And there you have your delicious raspberry white chocolate mocha! It’s time for you to enjoy and/or share it.
